Thanksgiving Recipes: Wild Rice & Rosemary and Mashed Sweet Potatoes

With the holiday around the corner, we thought it would be a nice change of pace to share a couple side dish recipes with you. Both dishes are super easy and a great addition to your table.

Wild Rice & Rosemary

You will need:

  • 2 tbs butter
  • 1 small onion
  • Salt & pepper to taste
  • 2 cup wild rice
  • 1 tsp chopped rosemary
  • 1 can vegetable broth (14.5 oz)
  • ½ cup chopped parsley

To make:

  • Melt butter over medium heat in a large saucepan
  • Add onion salt, and pepper – stir until tender
  • Add rice & rosemary – stir for 1 minute
  • Add broth and 1 cup of water – bring to a boil
  • Reduce to low heat, cover, and cook until rice absorbs liquid – 20-30 minutes
  • Add parsley and season with salt and pepper – serve!

This recipe serves 8, so feel free to half or double as necessary.

Mashed Sweet Potatoes

You will need:

  • 4 medium sweet potatoes (peeled and cut into cubes)
  • 1 cup half & half
  • 6 tbs of butter or margarine
  • 4 tbs brown sugar
  • Salt & pepper to taste

To make:

  • Steam your potatoes in a pot of water – bring to a boil then reduce heat
  • Steam until tender – 20 minutes or so
  • Drain and place potatoes in bowl
  • In a small saucepan, add half & half, butter, and brown sugar
  • Simmer over heat and stir to combine
  • Remove from heat and add to sweet potato bowl
  • Mash and combine until smooth
  • Season with salt and pepper

This recipe makes 6 cups of mashed potatoes. If you are expecting a larger group, simply double or even triple the recipe. It will be a hit!
