Holiday Side Dish: Roasted Brussels Sprouts

Looking for a last minute, easy side dish to bring to your family’s Christmas dinner? You can do this one will a kiddo on your back and another pulling on your pants. Yeah, it’s that easy.

You will need:

• 2 small red onions (cut into wedges)
• 3 tbs olive oil
• 2 pints brussels sprouts (trimmed and cut into halves)
• Salt and pepper

To prepare the dish:

• Preheat your oven to 425 degrees
• Toss onions, 1 tbs olive oil, salt, pepper in medium bowl
• On a rimmed baking sheet, spread onions and roast until tender – 15 to 20 minutes
• In same bowl, toss brussels sprouts with remaining olive oil, salt, pepper
• Add to baking sheet with onions, combining
• Roast and toss occasionally until tender and caramelized – 30 minutes
