Healthy Thanksgiving: Honey & Carrots

Honey makes everything better, doesn’t it? Sweeten up your Thanksgiving table with these honey-glazed carrots. They work well as a side dish, or you know, a midday snack when you are craving something sweet.



You will need:

  • 1 tbs vegetable oil
  • 2 lbs carrots (chopped into 1-inch lengths)
  • 1 cup canned vegetable broth or water
  • ½ cup honey
  • 2 tbs red-wine vingar
  • Salt & pepper to taste
  • 2 tbs unsalted butter

To make:

  • Heat oil over medium heat in large skillet
  • Add carrots to skillet and cook until browned – about 2 minutes
  • Add broth, honey, vinegar, salt, pepper – bring to a boil
  • Once boliing, reduce to simmer and cook until crisp and tender – 10 minutes
  • Uncover skillet and cook over medium-high heat – until carrots are tender and liquid has thickened – 7 minutes or so
  • Remove from heat and add butter, salt, pepper

So simple, so healthy, so sweet. We know everyone will enjoy them this holiday.
