Healthy Squash & Sage


Butternut squash is in season and it’s one of my favorite vegetables around this time of year. Aside from this recipe being a healthy side dish for your family, it’s also an easy recipe for holiday season. Seriously… before you know it, Thanksgiving will be here. Who needs a crazy complicated recipe when you have something as simple and delicious as this? Sign us up.

The Recipe

You will need:

  • 2 pounds of butternut squash (peeled, seeded, cut into chunks)
  • 1 tbs butter
  • ¼ cup water
  • 1 tbs fresh sage (chopped) OR 1/2 tsp dried sage
  • Salt & pepper to taste

To make:

  • In a skillet, melt butter over medium heat
  • Add chunks of butternut squash to butter and season with salt & pepper
  • Toss squash and cook until lightly browned – 5 minutes or so
  • Add ¼ cup of water, reducing heat to a simmer
  • Cover and cook until tender – about 10 minutes
  • Add sage and serve
